Small fish are more susceptible to germs because of their high protein and aqueous content. So these fish should be cooked quickly after purchase. It is better not to take it out of the fridge for a long time. Cook these fish on low heat. It is better to steam. If it is washed and left outside for a long time, the food quality is slightly damaged due to exposure to oxygen. It is not good to boil the fish and throw away the water. However, small fish have more uric acid, so it is better for arthritis patients to eat less. Kidney patients should eat less because they have more phosphorus.
